to be completely honest, a veterinarian can work in just about any capacity that you could possibly imagine. It's one of the best things about veing a vet -- you graduate with the education to pursue any permutation that you could imagine, and even if you settle down into one area of veterinary medicine, you can always change your mind, or be available to help in another area if need be. the education doesn't disappear -- it compounds upon itself.
There are a lot of specialties in veterinary medicine. You can become board certified in almost anything. Surgery, behavior, dentistry, endocrinology, pathology, pharmacology... Those are just some of the options.
Also, vets can work in research or academia or industry or government.
Government vets can work for the CDC, or the USDA or the army. They're going to have a lot to do wtih public health and making sure our food supply is healthy and containing diseases that may be passed on to humans.
Industry vets are employed by drug companies or food companies and there job is to make sure that those drugs or foods or what not are safe for animals and meeting whatever need they're designed to meet. In the case of food, they'd make sure it met nutrition requirements.
Research and academia usually overlap. Most vets employeed by universities perform some sort of research in addition to teaching. Usually, these vets have a PhD in addition to their DVM.
